Amatrice Sauce for Pasta

2 | tbls. | Olive Oil |
3 | cloves | Finely Chopped Garlic |
1 | small | Chopped Onion |
1/2 | cup | Dry White Wine |
1 | can | Chopped Tomatoes |
1 | tsp. | Sugar |
1 | tsp. | Chili Powder |
1 | tsp. | Paprika |
1 | tsp. | Dried Basil |
1/2 | tsp. | Cinnamon |
| | Grated Parmesan |
| | Salt & Pepper to Taste |
- Heat the oil in a large saucepan over medium heat, and sauté the garlic and onion for about 5 minutes, stirring frequently, until the onion is softened. Add the wine, tomatoes, and spices, and bring to a boil.
- Reduce the heat and simmer uncovered for 15 minutes.
- Ladle the sauce over the cooked pasta (1 lb dried) and serve with grated Parmesan cheese.
- Serves 4 - 6
